Lavender Shortbread Cookies

A Cozy Recipe for Last Season’s Dried Herbs

INGREDIENTS:

2 teaspoons of dried Lavender buds

1 cup (2 sticks) of butter at room temperature

1/2 cup powdered sugar

2 and 1/2 cups of all-purpose flour

1/4 teaspoon of salt

Coarse sugar for sprinkling

DIRECTIONS:

Using a food processor, pulse powdered sugar and dried lavender until well incorporated

Add softened butter and cream with sugar

Add flour and salt, and mix to combine ingredients

On parchment paper, roll dough into an 8-inch log using parchment or wax paper to smooth. Roll paper around log of dough

Chill wrapped log for 4 hours

TO BAKE:

Heat oven to 375 degrees

Slice chilled dough log into 1/4 inch slices

Sprinkle coarse sugar on top

Bake 13-15 minutes
